Two Rivers has been composting uneaten food and scraps for the past 3 years and providing a "fruit exchange" at lunch for students who do not want their fruit or want more.

Yesterday, one student took our fruit exchange to a new and delicious level. A large number of bananas had been left at the exchange basket, presumably due to their ripe state. Rather than composting them though, 8th grader Aleasha Rivera came up with a better solution.

With the help of her teacher, Mrs. Seals, Aleasha created healthy banana chocolate chip muffins. Mrs. Seals taught Aleasha how to create flour from oats, and the result was a delicious, healthy muffin with no added sugar that Aleasha shared with staff. She plans to make the muffins for her family as well.

Shout out to Mrs. Seals for creating a wonderful learning opportunity and life skill of maximizing food resources and creating delicious healthy treats, and to Aleasha, for taking the initiative to make a good thing even better!
